The introduction of the new Deli format set Coffee Republic totally apart from other coffee bars, cafes and restaurants and, best of all, converted units have seen an average turnover increase of more than 25 per cent. During the past two years the company has converted a number of its traditional espresso bars in and around London and Heathrow to the Deli format. "We offer the same great coffee that is our heritage," says Commercial Director Mike Baker, "but we have added a hot and cold fresh food range, served in a quick service environment." Coffee Republic still has a very limited number of existing bars ready to be converted to the Deli format, which will be handed over to franchisees as up and running businesses. We have in place great systems and training for our 50 existing bars.
